Gator Sauce Piquant - cooking recipe

Ingredients
    2 lb. alligator meat, cubed
    2 c. chopped onions
    1/3 c. cooking oil
    1/2 c. chopped celery
    1/4 c. chopped shallots
    2 (8 oz.) cans tomato sauce
    salt and pepper
    2 Tbsp. Worcestershire sauce
    1 can Ro-Tel tomatoes
    6 oz. can sliced mushrooms
    1/4 tsp. basil
    1 bay leaf
    1/4 tsp. oregano
    1/4 c. parsley
Preparation
    Alligator may be marinated in wine for 1 hour before adding to sauce.
    Saute onions in oil until dark golden brown, stirring often.
    Bell pepper and celery are then added and sauteed until tender.
    Add Ro-Tel tomatoes, tomato sauce and seasonings; simmer for 10 minutes, then add mushrooms and drained alligator meat. Cover and cook for 40 minutes.
    Add shallots and parsley.
    Cook, uncovered, for 10 minutes.
    Serve with rice.
