Vegetarian Chili - cooking recipe
Ingredients

2 1/2 c. kidney beans, cooked
1 c. tomato juice
4 cloves garlic, crushed
1 1/2 c. chopped onion
1 c. chopped celery
1 c. chopped carrots
1 c. chopped green peppers
2 c. fresh tomatoes
juice of 1/2 lemon
1 tsp. cumin
1 tsp. basil
1 Tbsp. chili powder (more, if desired)
3 Tbsp. tomato paste
3 Tbsp. dry red wine
3 Tbsp. olive oil
salt, pepper and cayenne to taste
Preparation

Saute onion and garlic in olive oil. Add carrots, celery and spices. When vegetables are tender, add green peppers.
Cook until done. Combine all other ingredients and heat together gently either in kettle or moderate oven, covered.
Serve topped with grated cheese.
