Great-Grandma'S Potato Salad - cooking recipe
Ingredients

6 good-sized potatoes
4 eggs
1 medium-sized onion
3 large stalks celery
3 Mancini sweet red peppers or a few green olives stuffed with pimentos for color
1 pt. or more Special Dressing (recipe follows)
salt
pepper
Preparation

Peel potatoes, cut into eighths and boil until tender in salted water.
Drain and cool.
Hard-boil eggs, cool and peel. Place potatoes and eggs in a large bowl and mash well by hand with a potato masher, but not as thoroughly as in preparing mashed potatoes.
Chop fine and add onion, celery and sweet peppers.
Add dressing, salt and pepper to taste.
The mashed potatoes absorb a lot of dressing, so before serving, check to see if more dressing is needed.
Keep refrigerated. Serves about 6.
