Eggplant Casserole - cooking recipe
Ingredients

1 large eggplant
1/2 c. grated Parmesan cheese
1/2 c. Mozzarella cheese
3 eggs, beaten
3/4 c. salad oil
1 Tbsp. oregano
1 c. dry bread crumbs
2 (8 oz.) cans tomato sauce or 1 small jar Ragu
Preparation

Peel and slice eggplant in 1/4-inch slices. Dip each slice in egg, then bread crumbs. Saute in hot oil until brown. Place layer of eggplant in dish. Sprinkle with cheeses, oregano and margarine. Cover with sauce. Repeat until gone. Bake at 350\u00b0, uncovered, for 1/2 hour or until bubbly and melted.
