Potato Pancakes - cooking recipe

Ingredients
    1 large potato, peeled and shredded
    1 egg, slightly beaten
    1 1/2 Tbsp. all-purpose flour
    1/2 tsp. salt
    vegetable oil
Preparation
    Combine first 4 ingredients, stirring well.
    Pour oil to depth of 1/8-inch into a large, heavy skillet.
    Drop potato mixture by 6 heaping tablespoonfuls into hot oil; press into 3-inch rounds with the back of a fork.
    Fry until golden brown, turning once.
    Drain well on paper towels.
    Yield:
    2 servings.
