Roasted New Potatoes With Lemon - cooking recipe
Ingredients

3 lb. small new red potatoes, quartered
salt and pepper
1/2 stick butter
6 Tbsp. lemon juice
2 tsp. dried thyme leaves
1 Tbsp. grated lemon peel
3 Tbsp. minced fresh parsley
Preparation

Preheat oven to 375\u00b0.
Butter large casserole.
Add potatoes. Season generously with salt and pepper.
Melt butter in heavy saucepan over medium heat.
Add lemon juice.
Pour sauce over potatoes and toss well.
Add lemon peel and toss to coat.
Bake until potatoes are tender, about 1 hour.
Sprinkle with parsley and serve.
Makes 6 servings.
