Cajun Potato Boats - cooking recipe

Ingredients
    4 jumbo baked potatoes
    1 lb. boiled and peeled crawfish tails
    2 sticks melted reduced fat butter
    1 pt. light sour cream
    1 T. Tony C's
    1 bunch chopped green onion tops
    2 c. shredded reduced fat cheddar
Preparation
    Cut tops off of baked potatoes.
    Scoop out each potato leaving 1/4-inch thickness with skin.
    Mash potato in large mixing bowl. Beat in butter, then sour cream, then seasoning.
    Fold in remaining ingredients; reserving 1 cup shredded cheddar.
    Stuff each potato shell full!
    Place potatoes on buttered casserole dish and top each with reserved shredded cheddar.
    Bake at 350 degrees for 30 minutes.
    Serve hot!
