Pedernales Chili - cooking recipe

1 Tbsp. vegetable oil
1 medium onion, chopped (1/2 cup)
1 tsp. minced garlic
2 lbs. lean ground beef, browned
3 Tbsp. chili powder (or to taste)
1 tsp. ground cumin
1 tsp. dried oregano leaves
1/2 tsp. salt
1/8 tsp. ground cayenne pepper
2 (16 oz.) cans tomatoes
2 (16 oz.) cans red kidney beans
Preparation

Mix all ingredients and simmer 50 minutes.
