Guacamole Salad Plate - cooking recipe
Ingredients

1 c. plain yogurt
1 large ripe tomato
1/2 c. chopped green onion
2 Tbsp. fresh lemon juice
1 pickled jalapeno pepper
1/2 tsp. salt
2 ripe avocados
2 cucumbers
1/2 head lettuce
Preparation

Place yogurt in a strainer and drain off any liquid.
Core the tomato and chop it into small pieces.
Chop the pickled jalapeno with seeds.
Mash the ripe avocado.
Combine it with all of the above ingredients except the cucumber.
On a large plate, place chopped lettuce as a bed.
Around sides, place thinly sliced cucumbers.
In the center on an individual salad plate, place the guacamole.
