Pickled Carrots(Diabetic) - cooking recipe

Ingredients
    4 or 5 carrots, chunked or baby carrots
    1 c. sugar or NutraSweet
    1/2 c. olive oil
    3/4 c. seasoned vinegar
    1 tsp. salt
    1 tsp. pepper
    1/2 tsp. dry mustard
    1 can tomato soup
    1 medium onion, sliced
    1 medium diced green pepper
Preparation
    Cook carrots until tender.
    Do not overcook.
    Combine everything and let set overnight.
    May add cucumbers or cauliflower, etc.
