Ingredients

1 1/2 c. grated raw potatoes
1 egg, slightly beaten
1/2 c. buttermilk
1 c. flour
2 tsp. sugar
1 tsp. salt
1/4 tsp. baking soda
4 Tbsp. melted butter
Preparation

Peel and grate potatoes
on
a
coarse
grater;
mix in beaten egg and
buttermilk.
Sift
dry
ingredients
together; add, all at once, to
potato mixture.
Mix very well.
Stir in melted butter.
Cook on
hot,
well-greased
griddle or frying pan; about 1/3 cup mixture per pancake or cook in waffle iron, about 3/4 cup per waffle.
Makes 8 pancakes or 4 waffles.
