Pineapple Nut Cookies - cooking recipe

Ingredients

1 c. shortening, softened
1 c. white sugar
1 c. brown sugar
1 c. crushed pineapple
2 eggs, well beaten
4 c. flour
2 tsp. vanilla
2 tsp. baking soda
1/2 tsp. salt
1 c. shredded coconut
1 c. chopped walnuts

Preparation

Cream shortening and sugars.
Add pineapple, eggs and vanilla. Sift dry ingredients and add to mixture.
Drop from teaspoon onto greased cookie sheet.
Bake 10 to 12 minutes at 350\u00b0.
Do not overbake.
Do not use electric mixer.
Yields 4 dozen.
