Ingredients

2 c. raisins
1 c. unsweetened applesauce
2 Tbsp. liquid sweetener
1 tsp. soda
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
2 c. water
2 eggs or 1/2 c. Egg Beaters
3/4 c. cooking oil
2 c. flour
1 tsp. vanilla
Preparation

Cook raisins in water until all water is absorbed.
Add applesauce, eggs, liquid sweetener and oil.
Mix well.
Blend in soda, flour, cinnamon and nutmeg.
Add vanilla after flour mixture.
Pour dough into greased tube or Bundt pan.
Bake at 350\u00b0 for 50 to 60 minutes or until cake tests done.
(Equals 1 bread, 1/2 fruit and 1 1/2 fat for diabetics.)
