Zucchini Cake(Best Ever) - cooking recipe

Ingredients
    3 c. sifted flour
    1 1/2 tsp. soda
    1 tsp. baking powder
    2 c. sugar
    2 tsp. vanilla
    2 c. grated zucchini
    1 1/2 c. chopped nuts
    2 tsp. cinnamon
    1 tsp. salt
    1 c. salad oil
    3 eggs
    2 Tbsp. sherry
    1 tsp. grated lemon peel
    1 c. seedless raisins or chopped dates
Preparation
    Combine flour, cinnamon, soda, baking powder and salt, mixing well.
    Set aside.
    Beat together salad oil and sugar.
    Add eggs one at a time, beating well after each addition.
    Add vanilla and sherry.
    Add flour mixture little by little.
    Add zucchini and lemon peel.
    Stir to blend.
    Fold in nuts and raisins (or dates). Turn into a well-greased 10-inch angel food pan or 9-inch Bundt pan.
    Bake in a 325\u00b0 oven for one hour and 15 minutes or until done.
    Let stand 5 minutes.
    Turn out on rack to cool.
    If desired, add vanilla glaze of choice.
