Ingredients

4 Tbsp. butter, softened
1/2 - 1 c. ricotta cheese
1 tsp. vanilla
1 c. sugar
1 egg
2 c. flour, sifted
1/2 tsp. baking soda
1/2 tsp. salt
Preparation

Blend butter and ricotta cheese until it becomes creamy.
Add vanilla, and mix well.
Add sugar while gradually beating until well blended.
Add egg, and mix well.
Slowly stir in all dry ingredients mixing well.
Drop by teaspoons onto an ungreased cookie sheet.
Bake at 350\u00b0 for 10 minutes.
Makes 30 - 36 cookies.
