Sweet Potato-Banana Casserole - cooking recipe

Ingredients

6 medium size sweet potatoes, peeled and quartered
1 medium banana, mashed
1/4 c. pineapple juice
1/4 c. sugar
2 Tbsp. half and half
1/4 tsp. almond extract
1/8 tsp. salt
1 1/2 c. miniature marshmallows

Preparation

Cook sweet potatoes until tender, mash and set aside.
Combine mashed banana and pineapple juice.
Mix well.
Add banana mixture and next 4 ingredients.
Mix well.
Spoon into a greased 8-inch square casserole dish.
Cover and bake at 350\u00b0 for 30 minutes until thoroughly heated.
Uncover, top with marshmallows and bake an additional 7 minutes or until golden brown.
Serves 6 to 8 people.
