Chicken With Eggplant - cooking recipe
Ingredients

6 skinless chicken breasts
1 medium eggplant, peeled and sliced
2 large onions, cut in large chunks
2 to 3 garlic cloves, chopped
2 green peppers, cut in large pieces
2 large tomatoes, skinned, seeded and cut into wedges
4 to 6 peeled potatoes
1/2 lb. mushrooms
bread crumbs
salt and pepper to taste
1 1/2 c. chicken broth
1/2 c. white wine
3 Tbsp. soy sauce
3 Tbsp. cornstarch
Preparation

Spray vegetable oil on skillet.
Dredge chicken breasts in crumbs and brown.
Set aside.
Salt eggplant slices which have been peeled and let stand 15 minutes.
Pat off with paper towel the excess water.
Dip eggplant into bread crumbs and layer on cookie sheet.
Bake in 350\u00b0 oven for 15 minutes, until tender.
