Raisin Carrot Muffins - cooking recipe

Ingredients
    2 c. flour
    2 tsp. baking powder
    1/4 tsp. ginger (ground)
    1/2 c. raisins
    1 (8 oz.) can crushed pineapple
    1/2 c. melted butter
    1/3 c. grated orange peel
    1 c. sugar
    1/2 tsp. cinnamon
    1/2 c. shredded carrots
    1/2 c. chopped nuts
    2 eggs
    1 tsp. vanilla
Preparation
    Combine flour, sugar, baking powder, cinnamon, ginger and orange peel.
    Stir in carrots, raisins and nuts.
    Separately combine undrained pineapple, eggs, butter or margarine and vanilla.
    Stir into dry ingredients until just blended.
    Spoon into greased muffin tin.
    Bake in 375\u00b0 oven for 20 to 25 minutes. Turn out on rack to cool.
    Makes 12 muffins.
