Pecan Pralines - cooking recipe

Ingredients
    3 c. sugar
    1 Tbsp. corn syrup
    1/2 tsp. salt
    3/4 c. milk
    2 Tbsp. butter
    2 c. pecans
    1 tsp. vanilla
    1 c. coconut (optional)
Preparation
    In a heavy skillet, caramelize one of the cups of sugar over a very low heat.
    Slowly bring to a boil the other 2 cups of sugar, salt, corn syrup and milk; boil 3 minutes.
    Slowly add the caramelized sugar to the boiling mixture.
    Cook until it forms a soft ball when tested in cool water or cook to 236\u00b0.
    Remove from heat; add butter.
    Allow to cool to lukewarm, without stirring. Add vanilla; beat candy until it begins to thicken.
    Add pecans and coconut and continue to beat until candy holds its shape when dropped on waxed paper.
