1 c. canola oil
1 c. sugar
1 c. packed brown sugar
2 eggs
2 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1 tsp. vanilla extract
1 c. buttermilk
1 c. flaked coconut
1 c. chopped nuts
powdered sugar
Preparation

In a large mixing bowl, combine oil, sugar, brown sugar, eggs and vanilla; mix well. Combine flour, soda, salt and cinnamon; add to egg mixture alternately with buttermilk. Stir until well moistened; add coconut and nuts. Pour into a greased 13 x 9 baking pan. Bake in 350\u00b0 oven for 35 to 40 minutes or until a toothpick inserted in center comes out clean. Let cool and dust with powdered sugar.
