Ingredients

6 eggs
6 Tbsp. granulated sugar
pinch of salt
cardamom to taste
1 tsp. vanilla or almond extract
6 Tbsp. cream
5 to 6 c. all-purpose flour
vegetable oil for frying
confectioners sugar
Preparation

Beat eggs; add sugar, salt, vanilla or almond extract, cardamom and cream.
Stir in flour, a cup at a time.
Dough should be stiff. Chill.
Transfer a small amount of dough to a lightly floured surface.
Roll dough to 1/8-inch thickness; cut in 2 x 3-inch diamond shapes.
Make a lengthwise slit about 3/4 inch in the center of each diamond; gently pull one end of the diamond through the slit as far as possible.
Do not tear the dough.
Drop a few cookies at a time into deep, hot oil (more than 1 1/2 inches).
Fry until golden brown, turning once, about 1 minute.
Drain on paper towels.
When ready to serve, sprinkle with powdered sugar.
