Quick Pumpkin Bread - cooking recipe

1 3/4 c. sifted all-purpose flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. ground cloves
1 1/3 c. sugar
1/3 c. shortening (can use butter)
2 eggs
1 c. canned pumpkin
1/3 c. milk
1/2 tsp. vanilla
Preparation

Sift together flour, baking powder, baking soda, salt, cinnamon and cloves.
In a large bowl, beat until light and fluffy the sugar, shortening and eggs, then beat in pumpkin.
Add dry ingredients, 1/3 at a time, alternately with milk and vanilla.
If desired, fold into batter 1/2 cup of coarsely chopped nuts.
Pour batter into a greased pan and bake about 1 hour or until bread tests done (clean toothpick).
Yield: Makes 1 (9 x 5-inch) loaf.
