Ingredients

1 1/2 c. all-purpose flour
1/2 c. granulated sugar
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1 c. thawed frozen strawberries (reserve 2 Tbsp. juice)
1/4 c. vegetable oil
1 large egg white, lightly beaten
1 oz. coarsely chopped pecans
1/2 c. light cream cheese
Preparation

Preheat oven to 350\u00b0.
Spray 9 x 5-inch loaf pan with nonstick cooking spray.
In large bowl, combine flour, sugar, baking soda, cinnamon and salt.
Make a well in center of flour mixture; pour strawberries, oil, egg white and pecans into well.
Mix until thoroughly combined.
Spoon batter into prepared pan.
Cool completely on rack.
