Mexican Cornbread - cooking recipe
Ingredients

1 c. yellow cornmeal
2 eggs, well beaten
1 c. sweet milk
1/2 tsp. soda
3/4 tsp. salt
1 (No. 3) can cream-style corn
1/2 c. bacon drippings or vegetable oil
1/2 lb. ground beef
1 large onion, finely chopped
1/2 lb. sharp Cheddar cheese, grated
4 jalapeno peppers (canned peppers), chopped
Preparation

Mix first 7 ingredients and set aside.
Saute 1/2 pound ground beef.
Drain on an absorbent paper towel.
The next 3 ingredients are prepared and placed in separate mounds, ready to be used. Grease a large iron skillet.
Heat.
Sprinkle a very thin layer of meal in skillet and brown slightly.
Pour 1/2 batter in skillet. Sprinkle cheese, then meat, peppers and onion evenly over batter. Pour remaining batter on top.
Bake in 350\u00b0 oven for 45 to 50 minutes.
