Fried Texas Potatoes - cooking recipe
Ingredients

5 c. diced cooked potatoes
1 c. minced onion
1 c. chopped green pepper
1/4 c. chopped parsley
1 tsp. salt
1/4 tsp. black pepper
pinch of red pepper
1/2 c. butter or margarine
Preparation

Mix potatoes, onions, green peppers, parsley, salt and pepper well.
Melt butter in heavy skillet until very hot.
Add potato mixture and fry at medium-high heat until brown.
Turn with spatula occasionally during frying.
Serves 10.
