Homemade Beef Salami(No Casing Required) - cooking recipe

Ingredients
    5 lb. cheapest hamburger (do not worry about fat content)
    2 1/2 tsp. cracked peppercorns (crack in a blender)
    2 1/2 tsp. mustard seed (crack in a blender)
    5 tsp. salt
    2 tsp. garlic salt
    2 tsp. liquid smoke
    1 tsp. saltpeter
Preparation
    Put all ingredients in a large bowl and knead until well blended.
    Cover tightly and refrigerate for 3 days; reknead once each day.
    On fourth day, shape mixture into 4 log shape rolls. Place logs on a rack with pan below to catch fat.
    Fat cooks out of meat.
    Put into oven set at 150\u00b0 for 8 hours.
    Turn logs after first 3 hours.
    Store in refrigerator.
