Sweet Potato Loaf Cake - cooking recipe
Ingredients

1 1/2 c. sugar
1/2 c. vegetable oil
2 eggs
1/3 c. water
1 3/4 c. flour
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. baking soda
1/2 tsp. salt
1 c. cooked, mashed sweet potatoes
1/2 c. pecans or walnuts
1/2 c. raisins
Preparation

Combine sugar, oil, eggs and water.
Beat at medium speed until mixed well.
In another bowl, mix flour, cinnamon, nutmeg, soda and salt.
Add to egg mixture, mixing just until moistened.
Stir in sweet potatoes, pecans and raisins.
Spoon batter into two greased and floured 1 pound coffee cans.
Bake at 350\u00b0 for 1 hour or until a wooden toothpick inserted comes out clean.
Let cool in cans 10 minutes, then remove cans for further cooling.
