Cajun Gumbo(Chicken Sausage) - cooking recipe

Ingredients
    1 large green pepper
    1 large yellow onion
    2 c. celery
    2 chickens, cut up
    1 to 2 lb. Polish sausage, cut in medium pieces
    1 pkg. frozen cut okra
    1 lb. shrimp or more (raw), peeled
    oyster, crab, or shrimp (if desired)
Preparation
    Chop pepper, onion and celery.
    Heat 1 cup cooking oil over medium heat.
    Add 3/4 cup flour; stir, scraping bottom, until dark brown.
    Do not scorch flour.
    Immediately add 1/2 of all vegetables, stirring until onion is soft.
    Add 1/2 gallon water; let boil 30 minutes.
    Add remainder of vegetables.
    Add sausage, 1 tablespoon red pepper, 1 tablespoons McCormick Season-All and 6 chicken cubes.
    Let boil 30 minutes.
    Add chicken and okra; let boil 30 minutes.
    Reduce heat to medium.
    Let simmer for 30 minutes.
    Add seafood and boil 15 minutes more, then serve.
