Farida'S Egyptian Lentil Soup - cooking recipe

Ingredients
    1 large onion
    olive oil
    1 1/2 c. lentils
    7 c. hot beef broth
    pinch of cumin
    lime
    buttered croutons
Preparation
    Fry onion in olive oil in large pot.
    When onion is soft, add hot beef broth and lentils.
    Simmer approximately 1/2 hour or until lentils are soft.
    Strain soup through a mill and season with salt and pepper to taste.
    Add a pinch of cumin and a squeeze of lime and heat for a couple of minutes.
    If consistency is too thick, add more water.
    Serve with wedges of lime (the more lime the better) and buttered croutons.
