Zucchini Quiche - cooking recipe
Ingredients

4 c. sliced, peeled zucchini
1 c. onion
1/4 c. margarine
1/2 c. chopped parsley or 2 Tbsp. parsley flakes
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. basil
1/4 tsp. oregano
2 eggs
2 c. shredded Mozzarella cheese
1 (8 oz.) can crescent rolls or 1 (9-inch) pie crust
2 tsp. Dijon mustard
Preparation

Saute zucchini and onion in margarine until tender.
Stir in seasonings.
Blend eggs and cheese. Stir into vegetable mixture. Spread rolls or pie crust in a 12 x 8-inch baking dish or 9-inch pie pan.
Spread mustard over crust.
Pour in vegetable mixture. Bake at 375\u00b0 for 18 to 20 minutes or until knife comes out clean. Cool 10 minutes.
Serve.
