Stuffed Vidalia Onions - cooking recipe

Ingredients
    6 large Vidalia onions
    1 1/2 c. crumbled cornbread
    1/2 c. cooked diced potatoes
    1 c. chicken broth
    1 hardboiled egg, sliced
    1 envelope instant cream of chicken soup
    salt and pepper to taste
    paprika to taste
Preparation
    Peel and wash onions.
    Simmer in enough water to cover onions for 10 mins. until almost tender.
    Remove pulp leaving only 2 outside
    layers of onions.
    Add pulp to other ingredients and place in blender on 'mix' setting for 10 seconds.
    Place onion shells in lightly oiled muffin tins.
    Fill with stuffing, sprinkle with paprika.
    Bake on 325\u00b0
    for about 30 min.
    To serve: place around meat dish.
    Only very sweet onions work for this recipe. Serves 6.
