Chicken Enchiladas(Microwave Easy) - cooking recipe
Ingredients

1 c. chicken broth*
1 c. shredded Monterey Jack cheese
1/4 c. taco sauce (hot or mild, whichever your tastebuds prefer)
1 Tbsp. diced green chili peppers (can use canned chili peppers)
6 (6-inch) corn tortillas
3/4 c. taco sauce (taste choice as above)
1/2 American cheese or cheese of your own preference
shredded lettuce (optional)
1 medium tomato, chopped (optional)
1/2 c. sour cream (optional)
1/4 c. sliced pitted ripe olives (optional)
Preparation

In a 2 quart casserole, heat chicken broth*.
Stir in 1 cup cheese, 1/4 cup taco sauce and chili peppers.
Spoon about 1/3 chicken mixture into center of each tortilla.
Roll up and place seam side down in a 12 x 7 1/2 x 2-inch baking dish.
Spoon 3/4 cup taco sauce atop.
Cover dish with vented microwave safe plastic wrap.
Cook on High for 5 to 8 minutes or until hot, turning dish half-turn every 3 minutes.
Sprinkle with 1/2 cup cheese.
Cook covered, on High about 1 minute or until cheese is melted.
If desired, top with lettuce, tomatoes, sour cream and ripe olives. Makes 6 servings.
