Zucchini Bread - cooking recipe

Ingredients
    2 c. grated zucchini
    2 c. sugar
    3 eggs
    1 c. oil
    3 c. flour (self-rising)
    1 tsp. vanilla
    1 tsp. cinnamon
    1 c. raisins, soaked 1 hour and drained (optional)
    1/2 c. nuts, chopped or 1/2 c. chopped cherries (optional)
    1 c. crushed drained pineapple (optional)
Preparation
    Beat sugar, eggs and oil until fluffy.
    Add flour, vanilla and cinnamon.
    Stir in zucchini and other fruits if you are using any of them.
    Fill loaf pans 1/2 full.
    Makes 2 or 3 pans.
    Bake at 325\u00b0 for 45 to 60 minutes.
