Mock Pecan Pie - cooking recipe
Ingredients

1 c. mashed pinto beans
2 c. sugar
pinch of salt
3 eggs, beaten
topping of ice cream or Cool Whip (optional)
Preparation

Beat sugar, salt and eggs together.
Add pinto beans.
Mix well.
Let ingredients stand for 1/2 hour.
Pour into unbaked pie shell.
Bake at 425\u00b0 until crust begins to brown.
Reduce temperature to 375\u00b0 and bake 30 minutes longer until center of pie is set.
May top with ice cream or Cool Whip.
Serve warm.
