Homemade Marshmallows - cooking recipe

Ingredients
    1/4 c. cold water
    2 Tbsp. (Grayslake) gelatin
    3/4 c. invert sugar
    1 1/4 c. sugar
    3/8 c. corn syrup
    1/2 tsp. clear vanilla
Preparation
    Put 1/4 cup cold water and the gelatin in a 2-quart saucepan; let soak together.
    Warm together 1/4 cup water, 3/4 cup invert sugar and 1 1/4 cups sugar.
    When sugar mixture is hot, but not boiling, pour into mixing bowl.
    Add the soaked gelatin, corn syrup and vanilla.
    Whip until white, fluffy and at least doubled in volume.
    Pour into pan or molds sprayed with Pam; allow to set 24 hours (sometimes less) before attempting to cut or unmold. Shapes may be rolled in toasted coconut or dipped in melted coatings or colored sugars.
