Sweet Potato Casserole - cooking recipe
Ingredients

4 sweet potatoes, cooked and peeled or 1 large (40 oz.) yams, drained
2 eggs, beaten
1/2 c. brown sugar
2 Tbsp. unsalted butter
1/2 c. chopped walnuts (optional)
Preparation

Mash the cooked or canned potatoes with the beaten eggs. Continue mixing with the brown sugar and softened butter until fairly smooth.
Spoon into a 1 1/2-quart casserole.
Sprinkle nuts on top.
Bake in 350\u00b0 oven for 30 minutes.
