Diabetic Cake - cooking recipe

Ingredients
    2 c. raisins
    1 c. water
    3/4 c. sugar substitute
    2 Tbsp. water
    2/3 c. oil
    2 c. flour
    1 1/4 tsp. cinnamon
    1/2 tsp. nutmeg
    1/2 tsp. salt
    1 tsp. vanilla
    1 c. chopped pecans
    1 c. unsweetened applesauce
Preparation
    Cook raisins in 1 cup water in saucepan until raisins are tender and water is absorbed.
    Combine sugar substitute, 2 tablespoons water, oil, flour, soda, cinnamon, nutmeg, salt and vanilla in mixing bowl.
    Mix well.
    Stir in raisins and pecans. Mix in applesauce.
    Spoon into greased and floured 9 x 13-inch cake pan.
    Bake at 350\u00b0 for 30 minutes or until light brown.
