Beef And Veggie Stir-Fry - cooking recipe

Ingredients
    6 Tbsp. oil
    3/4 c. coarsely chopped onions
    3/4 c. chopped bell pepper
    3/4 c. sliced celery
    3/4 c. sliced zucchini
    3/4 c. sliced yellow squash
    3/4 c. sliced carrots
    1/4 lb. sirloin steak, sliced paper thin
    3 Tbsp. soy sauce
    3 to 4 c. cooked rice
Preparation
    In skillet, heat 2 tablespoons oil to 375 degrees.
    Add the onion and green pepper. Saute just until tender, stirring constantly.
    Remove to a plate, using a slotted spoon. Add 2 more tablespoons oil and the celery, zucchini, yellow squash and carrots.
    Cook just until crisp tender.
    Remove to plate with slotted spoon.
    Add the remaining 2 tablespoons oil to the skillet.
    Saute the steak just until it begins to change color. Add the vegetables back to the skillet.
    Add the soy sauce and stir.
    Serve immediately over the rice.
