Feijoada(Black Beans And Rice) - cooking recipe

Ingredients
    1 lb. dry black beans
    water
    1 Tbsp. soda
    1 tsp. olive oil
    1 c. onion, chopped
    1 c. celery, chopped
    1 c. bell pepper, chopped
    1/2 lb. ground beef
    1 pkg. kielbasa sausage
    1 pkg. Italian sausage
    1/2 lb. ham, chopped in cubes
    8 cloves garlic
    1 Tbsp. cayenne pepper
    8 Chinese chili peppers
    2 Tbsp. cumin
    2 Tbsp. oregano
    2 Tbsp. chili powder
    2 Tbsp. thyme
    salt and pepper to taste
    rice to serve 8
Preparation
    Soak beans and soda overnight in enough water to cover.
    Drain and rinse thoroughly.
    The next day, saute onion, celery and bell pepper in olive oil in a Dutch oven.
    Brown meats together. Drain.
    Add to onion mixture.
    Add beans, then 3 quarts water. Bring to a boil.
    Add remaining spices, stir well and let simmer for 2 hours, stirring occasionally.
    Serve over rice.
    Serves 8.
