Ingredients

2 egg yolks
1 c. skim milk
1 1/2 tsp. grated lemon rind
3 Tbsp. lemon juice
1 1/2 Tbsp. oleo, melted
vegetable cooking spray
2/3 c. sugar, divided
1/4 c. plus 1 Tbsp. flour
1/4 tsp. baking powder
1/8 tsp. salt
2 egg whites
Preparation

Beat egg yolks until thick and pale.
Gradually add skim milk, lemon rind, lemon juice and oleo.
Beat well.
Combine 1/3 cup sugar, flour, baking powder and salt.
Add the egg yolk mixture and beat well.
Beat egg whites until foamy.
Add remaining sugar, 1 tablespoon at a time until soft peaks form.
Gently stir 1/4 of mixture into egg yolk mixture.
Fold in rest of whites.
Put in 1-quart casserole.
Set in pan of hot water.
Bake at 375\u00b0 for 45 minutes until top is set.
