Triple-Decker Vegetable Omelet(Makes 4 Servings; Carb Count: 7 Grams) - cooking recipe

Ingredients
    1 c. finely chopped broccoli
    1/2 c. diced red bell pepper
    1/2 c. shredded carrot
    1/3 c. sliced green onions
    1 clove garlic, minced
    2 1/2 tsp. Fleischmann's
    original margarine, divided
    3/4 c. low-fat cottage cheese (1% milk fat), divided
    1 Tbsp. plain dry bread crumbs
    1 Tbsp. grated Parmesan cheese
    1/2 tsp. Italian seasoning
    1 1/2 c. Egg Beaters
    Healthy real egg product, divided
    1/3 c. chopped tomato
    chopped fresh parsley (for garnish)
Preparation
    In 8-inch nonstick skillet, over medium-high heat, saut broccoli, bell pepper, carrot, green onions and garlic in 1 teaspoon margarine until tender. Remove from skillet; stir in 1/2 cup cottage cheese. Keep warm. Combine bread crumbs, Parmesan cheese and Italian seasoning; set aside.
