Carrot Cookies - cooking recipe

Ingredients
    2 c. granulated sugar
    1 1/2 c. shortening
    2 eggs
    2 c. cooked, mashed carrots, drained well
    4 c. flour
    4 tsp. baking powder
    1/2 tsp. salt
    4 Tbsp. orange juice or more
    grated rind of 1 orange
    2 Tbsp. butter
    confectioners sugar
    2 tsp. vanilla
Preparation
    Cream the sugar and shortening. Combine eggs and carrots with sugar mixture until well mixed. Add flour, baking powder and salt. Mix until moist.
    Drop
    from teaspoon onto ungreased cookie sheet. Bake in preheated 350\u00b0 oven for 15 minutes.
