Pepper Scallop Stir-Fry - cooking recipe

Ingredients
    1 Tbsp. oil
    1 c. thinly sliced sweet or red peppers
    1 c. thinly sliced green peppers
    1 c. thinly sliced onions
    1 lb. sea scallops
    1 tsp. oil
    1 Tbsp. soy sauce
    4 c. cooked somen noodles (may substitute dry Ramen, spaghetti or linguine noodles)
Preparation
    Heat oil in wok for 1 minute over medium-high heat.
    Stir-fry peppers and onions until just cooked, about 5 minutes.
    Remove and set aside.
    Stir-fry scallops for 3 minutes.
    Return vegetables to the wok and toss with scallops.
    Add oil and soy sauce.
    Toss, cover and cook 1 to 2 minutes.
    Spoon over cooked noodles.
    Serve immediately.
    Makes 4 servings.
    Per serving:
    400 calories and 6 grams fat (14% of calories).
