Zucchini Relish - cooking recipe
Ingredients

2 red peppers
10 c. zucchini
3 Tbsp. plain salt
4 1/2 c. sugar
1 tsp. pepper
1 tsp. turmeric
2 green peppers
4 c. onion
2 1/2 c. white or dark vinegar
1 tsp. celery salt
1 tsp. nutmeg
4 Tbsp. cornstarch
Preparation
-
Coarse grind onion, peppers and zucchini and sprinkle with salt.
Stand overnight.
Drain and rinse.
Drain again.
Heat to full boil, stirring constantly.
Seal hot in sterile jars.
