Exotic Chicken Salad - cooking recipe

Ingredients
    4 c. chopped, cooked chicken
    2 (5 oz.) cans water chestnuts, sliced
    1 c. finely chopped celery
    1 lb. fresh seedless grapes
    1 c. toasted slivered almonds
    1 c. mayonnaise
    1 1/2 tsp. curry powder
    1 Tbsp. soy sauce
    1 Tbsp. lemon juice
    1 (16 oz.) can pineapple chunks
Preparation
    Combine chicken, water chestnuts, celery, grapes and almonds. Mix mayonnaise, curry powder, soy sauce and lemon juice.
    Add mayonnaise mixture to chicken mixture and chill for several hours. Serve on leaf lettuce and top with pineapple chunks.
    Garnish with orchids, tropical fruit slices, etc. if desired.
