Carrot Cake - cooking recipe
Ingredients

1 1/2 c. sifted cake/pastry flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. shredded carrots
1/2 c. orange marmalade
1/4 c. finely chopped pecans
1 c. sugar
2/3 c. melted Crisco
2 eggs
Preparation

Preheat oven to 350\u00b0.
Sift together flour, baking soda, salt and spices.
Add remaining ingredients; blend well.
Spread batter in greased, fluted, 2-quart mold or mini-Bundt pan or 9-inch square pan.
Bake 40 to 50 minutes; cool 10 minutes in pan.
Invert on wire rack; cool completely.
Glaze and decorate as desired.
Makes one cake.
