Hotel Roanoke Spoon Bread - cooking recipe

Ingredients
    1 c. cornmeal
    1 c. cold milk
    1 tsp. salt
    1 1/2 c. hot milk
    1 Tbsp. oleo
    4 egg yolks
    4 egg whites, stiffly beaten
Preparation
    Combine cornmeal, cold milk and salt.
    Pour into hot milk in heavy pan, stirring constantly.
    Cook about 5 minutes, until thickened.
    Remove from heat and stir in butter.
    Cool slightly. Beat egg yolks until thick and lemon colored.
    Stir small amount of cornmeal mixture into egg yolks and add egg mixture to cornmeal, stirring constantly.
    Fold in beaten egg whites.
    Pour into ungreased 1 1/2-quart dish.
    Bake, uncovered, about 1 hour in 350\u00b0 oven.
