Cranberry-Pineapple Bread - cooking recipe

Ingredients
    1 1/4 c. flour
    1 c. brown sugar, packed
    1/3 c. shortening
    1 Tbsp. vegetable oil
    2 large eggs
    1/2 c. chopped walnuts
    1/2 c. shredded coconut
    1 tsp. vanilla
    1 tsp. baking powder
    1 tsp. baking soda
    1/2 tsp. salt
    1 c. quartered cranberries
    1 (8 oz.) can crushed pineapple
Preparation
    Place all in a large mixing bowl.
    Blend at low speed until all is moistened, then at medium speed for 2 minutes.
    Spread in loaf pan.
    Bake at 350\u00b0 for 35 to 40 minutes.
    Last few minutes of baking, sprinkle with coconut or dust with powdered sugar when cool.
