Shrimp Salad - cooking recipe
Ingredients

1 lb. shrimp, shelled
3 green onions
1/2 medium cucumber, peeled, seeded and chopped
1 (4 oz.) jar chopped pimientos, drained and patted dry
2 Tbsp. fresh dill or parsley
1/4 c. Feta cheese
2 Tbsp. lemon juice
2 Tbsp. olive oil
1 Tbsp. white wine vinegar
1 tsp. Dijon mustard
1 clove garlic
1/4 tsp. black pepper
Preparation

In a saucepan over medium-high heat, cook shrimp, drain and add green onions, cucumber, pimientos, dill and cheese.
Whisk together lemon juice, olive oil, vinegar, mustard, garlic and pepper.
Pour over shrimp mixture and toss gently.
