Shrimp Gumbo(Grand Isle) - cooking recipe

Ingredients
    2 lb. shrimp
    2 Tbsp. oil
    2 Tbsp. flour
    3 c. okra, chopped
    2 onions, chopped
    2 Tbsp. oil
    1 c. celery, chopped
    1 c. green pepper, chopped
    1 large can tomatoes
    2 qt. water
    1 bay leaf
    3 pods garlic, chopped
    2 tsp. salt
    1/4 tsp. cayenne pepper (or more if you like it hot)
Preparation
    Peel uncooked shrimp.
    Refrigerate.
    Make roux (dark) of flour and 2 tablespoons oil.
    To make roux you must cook slowly and stir constantly.
    It must be the color of chocolate when finished.
    Set aside.
